Freezer-Friendly Breakfast Burritos

Freezer Freindly Breakfast Burritos

  • 1 tablespoon unsalted butter, adiposity divided
  • 5 whole eggs
  • 10 egg whites
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 4 cups baby spinach
  • 8-ounce package fully cooked diced ham
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 10 tablespoons Sargento® Reduced Fat Mild Cheddar Shredded Cheese
  • 10 La Tortilla Factory® Low Carb, High Fiber Whole-Wheat Tortillas, Original Size
Other:
  • plastic wrap or freezer paper
  • 2 gallon size resealable bags
    1. In a large mixing bowl, whisk together the eggs and egg whites. Heat a large nonstick skillet, over medium-low heat. Add ½ tablespoon of butter to the skillet. When melted, pour the eggs in and allow to set up for about 1 minute, then proceed to scramble.
    2. Heat a separate large skillet over medium heat, and add the remaining ½ tablespoon of butter. Cook the peppers and onions for about 8-10 minutes, until soft. Add the spinach and cook for an additional 1-2 minutes until wilted.
    3. Spread the scrambled eggs on a baking sheet, and the cooked vegetables on another. Refrigerate until cool. Cooling the filling before assembly helps prevent the burritos from becoming soggy when they are microwaved.
    4. While the filling is cooling, spread the ham out on a paper towel-lined plate to remove excess moisture.
    5. Evenly fill each tortilla with the eggs, vegetables, ham, and 1 tablespoon cheese, then wrap like a burrito.
    6. Line a baking dish with the burritos and put them in the freezer for 15-20 minutes to flash freeze them.
    7. When very cold, wrap each burrito in plastic wrap individually, and then in freezer paper after that if desired.
    8. To microwave them after they are frozen: unwrap the burrito from the freezer paper and plastic wrap, then loosely wrap it in a damp paper towel on a microwave-safe plate. Microwave one at a time for 2½ to 3 minutes, then allow to rest for 1 to 2 minutes before eating, being careful because contents will be hot.

Freezer Breakfast Sandwiches

  • 6 large eggs
  • Kosher salt and freshly ground black pepper, to taste
  • 6 English muffins, split
  • 12 slices deli-sliced ham
  • 6 slices cheddar cheese
  • Preheat oven to 375 degrees. Lightly oil six 10-ounce ramekins or coat with nonstick spray and place onto a baking sheet.
  • Add one egg to each ramekin, beating slightly; season with salt and pepper, to taste. Place into oven and bake until egg whites are cooked through, about 12-14 minutes.
  • Place one egg over the muffin bottom. Top with 2 slices ham and 1 slice cheese, and then cover with another muffin top to create a sandwich. Repeat with remaining English muffins to make 6 sandwiches. Wrap tightly in plastic wrap and place in the freezer.
  • To reheat, remove plastic wrap from the frozen sandwich and wrap in a paper towel. Place into microwave for 1-2 minutes, or until heated through completely.
  • Serve immediately.

Amish Baked Oatmeal

  • 2 large eggs
  • 1/2 cup packed light-brown sugar
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/4 cups milk
  • 1/4 cup butter, melted (I used salted)
  • 3 cups rolled oats (quick oats works fine too)
  • Preheat oven to 350 degrees. Butter an 8 by 8-inch baking dish, set aside.
  • In a large mixing bowl whisk together eggs. Add in brown sugar, baking powder, cinnamon, vanilla and salt and whisk until no lumps remain. Stir in milk and melted butter then mix in oats. Pour into prepared baking dish and spread evenly (at this point you can refrigerate overnight if desired or bake immediately). Bake in preheated oven 30 – 40 minutes until set.
  • Cut into squares and serve warm with fresh fruit, nuts, milk, a little cream or half and half, maple syrup or honey if desired.

The Truth About Zofran

I have been recently contacted by ZofranLawsuitGuide.com asking me to get the word out on the dangers of a drug called Zofran. Many pregnant women are familiar with this drug since it’s prescribed to help with nausea and vomiting, but not many of us know about birth defects that Zofran can cause to a baby.

I’m usually against any medications in general, just because you never know the whole truth about any of them, I don’t want to endanger myself and especially my baby to any side effects. Thank God both of my pregnancies were good and I didn’t have bad morning sickness at all, I was prescribed Zofran once when I was pregnant with my second baby just in case my morning sickness got worse, and I waited as long as I could, not to take this medicine. But towards the end of my first trimester, I felt really sick and I took one, it helped. Luckily, the next day my morning sickness was gone, and I didn’t have to take more of it. But if I knew then what I know about Zofran now, I wouldn’t take it at all.

I’m not a doctor or medical worker, and I won’t ask you to solemnly rely on just this article, but I will ask you to do your own research on this drug before you take it, talk to your OBGYN as well. I read many articles about Zofran some say that the risk is minimal (but the risk is still there), some are completely against this medication to be prescribed to pregnant women. My New Year Resolutions

Usually, I’m not the person who makes New Year resolutions every new year 🙂 When I want to change something in my life I try to change it right away…not starting from Monday or next month, or after New Year… But this year the changes and improvements that I want to make in my life happened at the end of the year, so I thought why not to write a “My New Year Resolution Goals”. I really had to think and prioritize the goals I want to achieve in 2016. It’s just because there are so many things that I want to do and I want to become, and often I think I have so little time and that I need to rush and every second of my free time I must do something. But I also know that when you do 100 things at once, you will never be good at any of them. I mean I know it in my head, but now I should follow my own advice to prioritize and focus. Sometimes it seems like I have a chaos in my head, I have too many ideas and desires, like: I want to be a better wife, a better mother, I want to travel, and I want to blog more, I want to study photography, and I want to study makeup, I want to read more, and I want to learn a foreign language, to scrapbook, to paint etc. …and it’s just a small percentage of what’s going on in my head. So I decided to make the list of my resolutions for 2016 to be able to focus on just a couple of things and not to be distracted by so many others. 12 Weeks Body Makeover: Final (Thoughts, Results etc)

A week ago I finished my 12 weeks body makeover challenge. I don’t think I need to say anything about results..it’s pretty obvious… Again, as I mentioned before, my goal was not losing weight, but just to tone up my muscles (I still lost a little weight though..I’ll talk about numbers later in this blog). My overall thoughts on this challenge: I LOVED IT!! I’m not a fan of diets…but that’s the first thing we do when we want to lose weight. We starve ourselves or eating only fruits and salads, but by doing this we are setting ourselves for failure, because diets never last, eventually we go back to our lifestyle, eventually we start to eat what we ate and drink what we drank… And we have results for short period of time.. And it takes a lot of self-discipline to really stick to a strict diet. Or some people take pills and different powders, and maybe that’s fine when those pills are all natural and stuff, but I’m bad with pills, I don’t like to take something that I don’t 100% know what it is, even if it will bring the results. On the other hand this challenge doesn’t require you to starve yourself or take any pills, but you just need to have a desire to change your body and take some actions. I know a lot of people who want to lose weight but they don’t want to take actions. Losing weight or toning up muscles is a hard work, and nothing happens overnight, this is the reality. People have to understand. If you think that you will see results the next day, or that you can eat healthy for a month, get results, go back to old habits and still have a beautiful body, you will be disappointed. I did this challenge for 3 months, and I’m not perfect and I’m not a robot.. I ate ice creams here and there and I drank coke sometimes, I allowed myself eating sandwiches and burgers, pizzas, but it wasn’t every day, and I always got back on track and ate healthy. 12 Weeks Body Makeover: Week 8 – Week 9

So here’s my photo for week 8. I’m on a week 10 right now, but because I was sick last week and I didn’t workout and ate only chicken soup, I figured there is no point for a photo. But anyways, on week 8 I was better at drink a lot of water. And I’m not a fan of water. I can’t drink it in a big amounts like I’m supposed to.
