Monday Vlog: Family Fun At The Zoo

Our second try to go to the Zoo was a success!! It wasn’t super warm, but we couldn’t wait to get there and see the animals, ride a horse, feed the birds… And Christian loves going to the zoo so much, we didn’t want to tell him no 🙂

Besides going to the zoo, we had dinner with friends, playdates, David’s 6 months checkup, and don’t miss Christian’s singing (one of his favorite songs is “Thinking out loud” by Ed Sheeran) in this vlog!

Freezer Breakfast Sandwiches

  • 6 large eggs
  • Kosher salt and freshly ground black pepper, to taste
  • 6 English muffins, split
  • 12 slices deli-sliced ham
  • 6 slices cheddar cheese
  • Preheat oven to 375 degrees. Lightly oil six 10-ounce ramekins or coat with nonstick spray and place onto a baking sheet.
  • Add one egg to each ramekin, beating slightly; season with salt and pepper, to taste. Place into oven and bake until egg whites are cooked through, about 12-14 minutes.
  • Place one egg over the muffin bottom. Top with 2 slices ham and 1 slice cheese, and then cover with another muffin top to create a sandwich. Repeat with remaining English muffins to make 6 sandwiches. Wrap tightly in plastic wrap and place in the freezer.
  • To reheat, remove plastic wrap from the frozen sandwich and wrap in a paper towel. Place into microwave for 1-2 minutes, or until heated through completely.
  • Serve immediately.

Moody Family Children’s Museum

If you’re planning to visit Dallas (with or without kids) definitely check out the Perot Museum! We love this place! And Christian (my 2 y.o) loves to have fun at Moody Family Children’s museum (located inside the Perot Museum). It’s big and there are so many things to do! He can spend the whole day there and not get bored. I like this place because it’s not just a playground for kids, it’s a discovery museum, where they can learn different things, explore and have a great time at the same time!

Moody Family Children’s Museum is divided into different sections:

Miniature Dallas Farmer’s Market

Here kids can pretend play. They can wear aprons and pretend that they’re farmers picking different produce, loading/unloading the truck or they can pretend that their truck drivers etc.

Here they can explore nature, plants, and it even has displays with real bugs and insects..

I can’t believe that we are already half way through. I’m really enjoying putting this meal plans together. And I hope you guys find it useful and this meal planning helps you 🙂

1. Heat oil in a frying pan until pretty hot and saute chopped kale (center ribs removed) for 2 minutes with a little salt. Set aside kale and wipe out pan.

2. In a bowl, beat one egg and season to taste. Add oil to frying pan. Pour beaten egg into pan and let it spread thinly. Lower the heat. Once the omelet is cooked, use a rubber spatula to gently fold the omelet into quarters.

3. Stack kale and egg on toast. Grate cheese on top. Place toast back into warm pan and cover for 30 seconds to melt cheese.

Valentia Eye Cream | Review

I feel like right now I’m at the age when I really need to start taking care of my skin to prevent wrinkles, fine lines, dark circles (well, that I already have thanks to sleep deprivation). And I’m 28, in case you’re curious 🙂 A couple of years ago I haven’t even used an eye cream on a regular basis, I should’ve, but I haven’t. And only recently I started to feel that my under eye area feels dry and needs some moisture. I started to look for an eye cream, I purchased a couple from a drugstore, and then I tried a high end one. And I realized that I’m pretty picky when it comes to eye creams 🙂 One was too thin for me and oily, another one was too thick. Recently I’ve had an opportunity to try True Glow Eye Cream by Valentia. Here is what the brand claims:

Amish Baked Oatmeal

  • 2 large eggs
  • 1/2 cup packed light-brown sugar
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/4 cups milk
  • 1/4 cup butter, melted (I used salted)
  • 3 cups rolled oats (quick oats works fine too)
  • Preheat oven to 350 degrees. Butter an 8 by 8-inch baking dish, set aside.
  • In a large mixing bowl whisk together eggs. Add in brown sugar, baking powder, cinnamon, vanilla and salt and whisk until no lumps remain. Stir in milk and melted butter then mix in oats. Pour into prepared baking dish and spread evenly (at this point you can refrigerate overnight if desired or bake immediately). Bake in preheated oven 30 – 40 minutes until set.
  • Cut into squares and serve warm with fresh fruit, nuts, milk, a little cream or half and half, maple syrup or honey if desired.
